Mail variables are placeholders that can be used in emails sent by the system. The workflows provided with specific software products also include variables for this purpose. The emails sent via these workflows are then populated with these variables.
These variables, or the templates containing them, can be found under System Settings - Basic Data - Document Templates - Template Groups.
Depending on the installed workflows, template entries are stored here. If you open these entries, you will see the variables they contain in the section of the same name.
